Crafted from a limited 8-barrel production, this 2021  Reserve Cabernet Sauvignon showcases the careful, hands-on approach of its French trained winemaker. The choice of Clone 7 grapes, celebrated for their small berries and intense flavors, ensures a concentrated and complex profile. The winemaker’s expertise is evident in the careful management of fermentation and aging processes, which emphasize the vineyard’s characteristics while allowing the wine’s natural qualities to shine.

 

The fermentation occurs in small, open-top barrels, allowing for optimal oxygenation and gentle extraction.
